Light blue coconut milk



        
     

Late afternoons always ask for something refreshing and sweet...that smells like summer...fruit or juice? Ice cream maybe?? Well, I have something more special in mind...come with me and I'll show you...

There is lots of buzz around coconuts  lately...Coconut milk, coconut oil, coconut cream, coconut water and the list goes on and on....What I'm about to suggest is not as healthy and pure as coconut milk with oatmeel... but life is all about being naughty sometimes, don't you think?! 
As I was scanning my fridge the other day, derperate for something cool and uplifting - I had already turned down fruits and veggies - and there was no ice cream - eyes stopped on the coconut milk carton! ( cow milk has been replaced by nut milk due to a mild intolerance - and I enjoy it much more - and my skin enjoys it, no more acne for me!! )

Then a post of wonderful Two Red Bowls came accross my mind...so I started improvising! 



I needed the carribean sea blue colour, the coconut flavor and a sweet and sour taste, something intense..so I began to mix together....


.... Blue Curacao and lime juice....


.......white rum and coconut milk.......
lemon verbena leaves and coconut flakes......

and ended up to this recipe: 
  ( light blue coconut milk for two )

  •  170 mL coconut milk ( not canned, unless you prefer to eat it than to drink it...:):) )
  • 30 mL  Βlue Curacao liquer
  • 30 mLwhite rum
  • 25 mL lime juice
  • lemon verbena leaves ( they add a fine lemon flavour - optional )
  • coconut flakes for garnish ( just a few - it's suppose to be a coctail not a cupcake....! ) 







Mix all ingredients, shake and pour your tropical milk over ice in short glasses :














Relax on your chair and enjoy your drink watching the sun go down...an exciting summer evening is about to begin.....

    Να πω την αλήθεια παλιά ποτέ δε θα σκεφτόμουν να συνδυάσω γάλα καρύδας με ρούμι! Πραγματικά πειραματίστηκες!
